Once upon a time, Ah Chuan Fried Oyster Omelette was dubbed as one of the best Orh Luaks in Singapore – but that was when the owner with almost 40 years of experience was behind the fiery wok. Now with the retirement of the original chef, would Ah Chuan fried Oyster Omelette still live up to its name? For those who are unaware of what Orh Luak is, it is a dish of eggs and a flour batter with oysters. To me, a good plate of Orh Luak would be a good Egg to Batter Ratio, and well seasoned batter with plump and juicy oysters.

We ordered a small plate of Oyster Omelette ($5) to try and at first glance, it looked like a textbook-perfect Orh Luak – generous amount of egg (we secretly counted about 5?) well-balanced with the batter, and garnished with coriander. The first few bites were shiok as there were a lot of eggs latched onto the batter. But after a few more mouthfuls, it got a bit jelak as it was greasy. It was hard to miss the layer of oil sitting underneath the Orh Luak.

The batter was well seasoned, not overly salty, a perfect harmony with the eggs. The texture of the batter was also moist and chewy. Though, the Orh Luak would have been better if the batter was more well distributed as we found a few lumps of batter while eating.

The oysters were fresh and plump, every bite was an explosion of seafood umami. Their chili was of a thinner consistency, and as it was infused with lime, and had a sour tang to it. Other than Oyster Omelettes, Ah Chuan Fried Oyster Omelette also serves up Carrot Cake in White or Black.

After tasting their recent Oyster Omelette, I dare not say that it is one of the best Orh Luak in Singapore. But, it is for sure a decent plate of Orh Luak with generous amount of eggs and fresh oysters! Oh and one more thing, try to catch the uncle in a good mood.
