Nestled in the heartlands of Singapore is a humble Char Kway Teow selling delicious Singapore-styled Char Kway Teow. The perfect combination of black, sweet and wet Kway Teow on a plate keeps you wanting more. It was not difficult to find this famous Ang Mo Kio Fried Kway Teow stall as the queue gave it away.

With its simple stall front and selling nothing but their signature Char Kway Teow, the pricing is transparent with a big and small plate going at $5 and $4 respectively. Each plate is fried freshly on the spot as with most Char Kway Teow stalls. 

Even its small size was generously filled to the brim, with a variety of ingredients – fish cake, bean sprouts, cockles (hum), and pork lard. Tossed evenly with some noodles and Kway Teow, it was delicious with strong wok hey, and sweeter than usual black sauce.

For us, it was a real hit as we enjoy dark sauce (the more the merrier!) although some might find it too sweet for their liking. Nonetheless, if you choose every spoonful carefully, you will see that there is plenty of pork lard to go around! The savoury fragrance of the lard helps to balance the sweetness of the Char Kway Teow. Even for someone like myself who tries to be health-conscious, I couldn’t help searching for the pork lard. 

Personally, the freshness of the cockles is a dealbreaker for Char Kway Teow. Although there weren’t many hums, thankfully the cockles were rather fresh and did not have the fishy taste which would have otherwise spoiled the dish. Still, I would consider hums to be a star ingredient in every Singapore-style Char Kway Teow, so I would have liked to see more and fatter cockles in AMK Fried Kway Teow.
